Our barrels are left to dry in the courtyard of the Maison Bollinger family home at 16 rue Jules Lobet, Aÿ. From there, you are just a few paces from the cellier, where still wines begin their long journey towards becoming Champagne.
You will find the winery just two roads away at Chaudes Terres, equipped with gleaming thermoregulated stainless steel tanks. A staircase is all that stands between it and our cellars, where cuvées are ageing quietly.
